The Dangers of Eating Processed Meat

Think twice about eating breakfast that frequently includes processed meat like bacon and sausage.

Processed meat is any meat preserved by curing, salting, or smoking. It includes bacon, ham, hot dogs, pastrami, salami, sausage, and other lunch meats. Hamburgers may also fall into this category if preserved with salt or chemical additives.

Researchers from the Harvard School of Public Health looked at 20 studies involving more than a million participants from 10 countries. Their findings suggest that eating just 50g of processed meat a day – roughly one sausage or three slices of bacon – was associated with a 42-percent increased risk of coronary heart disease and a 19-percent increased risk of diabetes.

According to an analysis by the World Cancer Research Fund, eating just one sausage a day can significantly increase your risk of bowel cancer, one of the deadliest forms of cancer.

Moreover, processed meats may also:

•    Increase your risk of colon cancer by 50 percent 
•    Lower your lung function and increase your risk of chronic obstructive pulmonary disease (COPD) 
•    Increase your risk of bladder cancer by 59 percent 
•    Increase your risk of stomach cancer by 38 percent 
•    Trigger esophageal , lung, and prostate cancer



How Processing Can Create Carcinogenic Meat

The nitrates added to meat during processing as coloring, flavoring, and preservatives are frequently converted into carcinogenic nitrosamines, Dr. Joseph Mercola explains. This is the main reason why Dr. Mercola recommends avoiding  all processed meats.

Some processed meat labels include MSM or “mechanically separated meats.” According to the U.S. Food and Safety Inspection Service, MSM is a "paste-like and batter-like meat product produced by forcing bones, with attached edible meat, under high pressure through a sieve or similar device to separate the bone from the edible meat tissue.” Back in 2004, all mechanically separated beef was removed from hot dogs and other processed meats because of concerns that it could cause mad cow disease. Mechanically separated pork, chicken, and turkey are still allowed, so beware: “MSM” on the label means return it to the shelf.

Many processed meats also contain other unhealthy additives like high-fructose corn syrup and MSG, which have no place in your diet.

How to Choose Higher Quality, Nutritious Meat


Don’t settle for processed meat because there are healthier options. Here are Dr. Mercola’s guidelines for choosing meat: 

•    Choose organic meats that are grass-fed or free-range. 
•    Look for “uncured” varieties that contain NO nitrates.
•    Choose products that say “100 percent beef,” “100 percent chicken,” etc. This is the only way to make sure that the meat is from a single species and does not include byproducts like chicken skin or chicken fat.
•    Avoid any meat that contains artificial colors and flavors, high-fructose corn syrup, MSG, or preservatives.
•    Buy your sausages and other processed meats from a small, local farmer who you can ask about the ingredients. These meats are still not ideal as they are processed, but they are better than the majority of commercial processed meats available at the supermarket.
